Hi everyone,
I would like to know which special characters to avoid when naming embedded data.
The support page only mention emojis, period (.) and hashtags (#).
Are there any others?

https://community.qualtrics.com/XMcommunity/discussion/24191/special-characters-in-embedded-dataPeriods are fine. Qualtrics uses periods in the embedded data field names returned from web services.
To keep things clean, I recommend avoiding anything other than letters, digits, _ (underscore), and . (period). That includes spaces because they can cause confusion.
