I don't see Cantonese on the list of languages for translation. Is it possible to have a survey translated in that language?

You can create a language in the translation module.
Cantonese is a spoken (oral) dialect. There are two forms of written Chinese: Simplified and Traditional (Hong Kong). My understanding is that speakers of Cantonese and Mandarin can't understand each other, but they would both understand something written in Simplified Chinese.
