I am wanting to change the free text response from a single line that respondents can not see what they have already written to a paragraph format where the text is displayed in 'chunked' blocks, and you can see what has been entered without having to scroll back.

Hi tjspeare if I'm understanding your question right, you'd just need to change the text type setting for the question. It's illustrated early on on this page: https://www.qualtrics.com/support/survey-platform/survey-module/editing-questions/question-types-guide/standard-content/text-entry/
