I want to be able to acknowledge that a respondent has selected a particular choice for a question but do not want to put a positive (or negative) value against that choice. If I leave it set to # that scores it as 0 (zero) but can I count the number of times a choice is selected by being able to count the number of 0 (zero) choices made?

Create a new scoring category and put all the scores as 1, the sum of this score will be number of zeros
