I have two surveys administered pre and post intervention on which I have asked the same questions. How can I visualize on a report the shift in opinion of the survey-taker? For example, I ask what comfort level people feel about doing a certain task and they answer on a scale (very uncomfortable, hesitant, neutral, I think I can do it, Very comfortable). I want to measure what percent of people shifted in a positive manner. Do I need to add a weight to each answer option? What visualization and metric should I use?

You can use Tableau, Qlik, Spotfire, PowerBI or any other data visualization tool. You can download csv file from qualtrics and clean and prep data so that survey data is transformed and ready for visualization. If you are not sure how to do that you can use VizualSurvey to clean and prep qualtrics survey data and can use prebuilt survey dashboard. You can check their article about Visualizing survey data
