I am creating a survey for an in-house training test which needs to be scored. Many questions are fill-in-the blanks. How do I set up scoring for this type of question?

You can do it for single text entry question but not for form type. By defining answers you can provide score.In order for the respondent to receive the score for a Text Entry question, their answer must exactly match the text you indicated in the scoring editor (except for capitalization).
