We have some imbedded images in our invitation letter (School logo, director's signature) that are not displaying I believe because of the security associated with the school's email accounts.
Is there any kind of work around for this? They display fine in hotmail, gmail, yahoo etc.

If you haven't done so already, you might want to confirm with the school's IT what exactly they are blocking/what that policy is. Do they allow images through that are hosted on their own web servers? Do they allow images through from internal emails coming from their own email domain?
If they allow images that are hosted on their own web servers, can you have them host the images you need and then reference them? (Our resident email guru admits this is probably a long shot).
Or, if they allow images through if the message originates from their own email domain, can you set up an SPF record or SMTP relay to allow the invites to be sent from the school's own email domain? https://www.qualtrics.com/support/survey-platform/distributions-module/email-distribution/using-a-custom-from-address/
