When using piped text, should you be able to see it function in preview? How can make sure is working properly?

You'll see it in survey preview, unless it is an embedded variable set from the panel or url. In that case, you'll have to add it to the preview url to see it. You typically won't see it in block preview unless if comes from a question in the same block. You will never see it in question preview.
