I'd like to store historical NPS data instead of just updating my NPS field in Salesforce, as it overwrites with new responses. How do I do this?

Is this a Qualtrics-SFDC integration question? If so, it sounds like you don't have the ideal setup. Ideally you should be creating unique survey response records every time a new response comes in so no data should be overriding. You should be able to have dozens of unique survey responses tracked for a single respondent.
