I edited the e-mail of a contact after the initial distribution. There are still pending reminders.
What is the best process to send these edited contacts the initial survey invite again?
I would rather not create a new distribution or new survey links for these contacts.

You can click on download history of the contact and you would get the link which was sent to the specific contact id for whom you changed the email address for. To send this to the new email address you can copy the link downloaded from history and use send email without survey and add this link manually.
For the scheduled reminders you need not worry as they will go to new email addresses only and not to the previous ones. As reminders are set on the contact id and not on the previous email add.

+10In the past, after correcting/updating the email, I created another email distribution and sent it to only that one person from the contact list.

Not necessarily, you can download the entire distribution history and add your changed email address contacts to a new list and download the list of contacts separately.
Now you can create a spreadsheet of all the people by merging for whom the email address is changed along with the "Link" from history which was sent as embedded data and import in the new list.
Post which while creating a distribution you can just pipe in "Link" embedded data in the message body and link will be inserted and sent to the entire list at once..
