How can you anonymize only one response in a survey?

I have a survey where we need to ask an open ended question where participants input their email address (for the purposes of sending an automated email trigger to what they enter), however we don't want to actually see the email that they enter.
Is there a way to prevent this particular response from being shown to the data collectors, or anonymizing only this response?

You can have 2 workflows task one below other. First would be to send an email based on the email address they enter. Below it would be this API to update the particular responses email add with dummy data or blank.
