I'm wondering if I can add a required text box question after a multiple choice? So after the person makes the selection, they are then required to fill out more information before moving on?

Add a text entry question after your MC with force response and use in-page display logic to display based on the MC question choice. Qualtrics will display a warning, but it will work as you intend.
