I want to create a cross tabulation that will show me results for a set time period (we had to re-open a survey so its still collecting), but I want to know the results up to last Friday. is this possible please?

Unfortunately, I think you are out of luck as far as a cross tab goes. You can only use questions and embedded variables, and you can't create an embedded data field using end date after the fact.You'll have to use a report or download the data and create your own.
