compiling a list of email addresses

Is there an away that a survey can be designed so that participants enter their email address and a list of them gets compiled (and emailed elsewhere?)

Sure, you can have a standard text entry question with an email validation type.
This will be available in your Data and Analysis tab and you can export it as a list when your survey was finished.
Alternatively, you can send an email each time a survey is finished, with the email address in the body with an Action.
