Embedded data in response option not carrying over to end of survey summary

Hello -
I have a survey where one of the questions contains embedded data (dates). in the response options. This displays correctly when taking/previewing survey, but in the end of survey response summary, (or anywhere that questions selected choice gets piped), it displays the selection without the embedded data. I had this working on the same survey a couple of weeks ago and now it seems to have stopped displaying, any ideas?
