I would like to change the text of the Next/Previous buttons on my survey. How can I do this?

Create custom survey messages, as needed, under your messages library (message type would be "Look and Feel Messages"). (You can also translate a single button/message into other languages.) Then go into your survey's Look & Feel menu and select the ones you want to use.

In addition to Anne's suggestion above, you can also change the Next/Previous button for individual blocks in your survey (ie "Get Started" at the start of the survey). To do so, you would click on the drop down arrow "Block Options" next to the block you want to change. You'd then press Next/Previous Button Text and make the change.
