I'm looking for a way to split my participants into 50% mobile and 50% desktop users. We want them to physically take the survey on their mobile device or desktop.

From a different post: "we usually do it is by using brand logic "if Device Type is Mobile" and then add an embedded data "Mobile" with values Yes/No."

I would look at embedded data options to collect; then you can use those in quotas to ensure you get the right mix. While I'm not entirely sure the exact method for collecting device, this option allows for operating system, which may narrow it down?
