Usually you can find the Revision History of an intercept in the Manage dropdown menu located at the top-right corner of the intercept editor. If you can share more info on your intercept, i can help you to find this option. 

The problem is, I don’t have that option on this style of intercept for some reason

Which type of access do you have and which type of intercept it is.

It’s for an exit intent pop over. I am the brand admin

I just checked, I can see this option on my sandbox for exit intent survey. It could be related to your user user access, Go to ‘Admin - User - open your user - website feedback’ and see if you have access enabled for all the options.
