I have two embedded data points called Number of Sessions and Hours that I want to include in a distribution email to my contacts (w/o the survey link). Each time I do a test email, the email shows ${e://Field/Number%20of%20Sessions} and ${e://Field/Hours}, but not the actual data.

Are you testing it via “Send Preview email” button? It will not populate embedded fields. Please check using “Send Now” option.

2nd possibility could be your HTML code. Try to view your email’s HTML content and see if there are any additional tags are added by mistake.
