Is there a way to update my community email address? It's currently linked to my old job but I still use Qualtrics at my new company so it'll be nice to update my details.

In general I know users are managed by the brand admin. When your account is set up they claim the email address and designate your user type.
Qualtrics support has an article on User Moves that lays out how to transfer your account from one organization to the other.
