I was able to use CSS to change the color of text in a drop-down box but it's not appearing differentiated by color when I preview or publish the item. Does anyone know a workaround for this issue? Thank you, in advance!

Dropdown options are parsed differently. Add this CSS to your question HTML to change its style. You'll have to change the number based on your setup.
