I can't save some fields in salesforce when the question options are different from salesforce picklist options.

This is to preserve the data integrity between the two systems, and prevent sync failures when the integration attempts to add data from Qualtrics to what would be viewed as an invalid lookup option in the SalesForce platform. You should have a matching value in SFDC for each of your answer choices when mapping to a lookup field. You other option would be to set the answer choice to an embedded data field in your survey flow and map the embedded data to a text field in SFDC.
