Does anyone know how to calculate the minimum required sample size for ordinal data with 5 levels?

That'll depend upon your effect size. A good place would be to start would be to look at scales that have been developed related to your question and see their sample sizes. Usually these papers should have an explanation of why they chose the specific number of levels.
