Does anyone know of any html code that would eliminate the video controls for embedded Qualtrics videos? I was told Qualtrics doesn't have a workaround for it.

This has been answered here :) See the second page in the linked comment for example.
You'll need to insert the HTML yourself to display the video as you want, but the author has been thoughtful enough to include a template that is easy to understand.
