I'm looking for a way for a user to select an 'N/A' option on a multi-select question, whereby selecting 'N/A' will disable the other response options so a person cannot select 'N/A' as well as another response option. If this is possible I'd love to know!

Click on the N/A choice, then click on the arrow to the right and choose "Make Answer Exclusive".
@jfedder88 this is a built in feature of Qualtrics.
In your list of response options click on your 'N/A' option. An option to open a drop down menu should appear. In the drop down list select 'Make answer exclusive'.
