I need to use the matrix function to summarise a range of data variables for respondents to rank. I also want to add an 'other' option, in case the options provided don't cover every relevant data point. How do I do that in the matrix and the multiple choice questions?

You can set choices to allow text entry. It's there when you click the blue down arrow while writing the choice text.
