Would like to know how your Univ/Campus/Company handle the non-accessible questions

We have a policy for our non-accessible questions to be turn off but if they need to the non-accessible questions that do not have a workaround then they have to fill out a form asking the settings to be turn on. Since the Matrix was turned off in December there is now more push back to have them turn back on. If you have the non-accessible questions turn on how do your company protect your Univ/Campus/Company from being sued? We are to follow the section 508.
