Changing a quesition from multiple answer to single response in a dashboard?

We are using survey questions that come directly from a state agency. The race/ethnicity responses, for the purposes of the dashboard, need to be changed to meet our reporting requirements.
If Hispanic or Latino/Latina THEN Hispanic or Latino/Latina
ELSE IF prefer not to say THEN prefer not to say
ELSE IF More than one selected THEN Two or more
ELSE selected Race/Ethnicty

Is there a way to do this in the Dashboard.

J_Lindner - everything except 'ELSE IF More than one selected THEN Two or more' can be done using recode values feature on dashboards.
