I downloaded the same database in 2 different days and in the date and time i have a difference of one hour between the first and the second download.
I have no idea of what is causing this difference, do you guys have any idea of why this may have happened?

Hello Erika, This could be happening due to the timezone that you may have set in your account settings.
I think both times when you downloaded the database, the account used must have had a different timezone.
