I have a question: How can I set up my Qualtrics survey so that responses download as numerical values (e.g., '0' for 'Not at all' and '5' for 'Very much') and how do I download it into Google Sheets or Excel?

When you are exporting the data you are given options, more details in the link below
you need to select “use numeric values” to get numerical values in your export.
In order to download in to Google sheets follow the instructions in the link below
