Does anyone have experience with how to restrict participant data (Name, Email) from the Data & Analysis tab for admins. We do not want them to be able to pull identifying information by employee.

You can prevent them from downloading the survey results by disabling the option in the manage User Permissions and Data Privacy Settings tab.
Additionally, if you do not want to store the contact information you can anonymize responses in the Survey options tab.
