Using Anonymize Responses option versus EOS Do Not Record Personal Information: how do they compare?

Hi Community,
Does anyone have experience using both of these features (not necessarily at the same time)? I'm interested to see how they compare in real data collection scenarios.
Personally, I've used Anonymize Responses but not the EOS Do Not Record PI. I've looked at the Support pages but it doesn't really compare them side by side. As far as I can tell, the only obvious difference is that Anonymize Responses applies to all collected responses, but EOS Do not Record PI can be applied selectively to responses that go through a certain path in the Survey Flow.
Am I missing any other differences or applications? Curious to see how other users have utilized these features.
