Hi! I would like to post a survey where participants can sign in for an appointment. I have created already two questions: one is a calendar to pick up a date and another is a multiple choice question to pick up a time slot. As only a participant books certain date and time, I want the slot to disapear for another individual so that one time slot is only for one participant. How to do that?

There might be a better approach but you can increment Quotas as soon as the survey response is submitted. And use option based display logic to hide that option based on quotas.
If you would want to update real time you need to include webservice in survey flow (https://api.qualtrics.com/a6852971b4d92-update-quota-in-the-given-survey)
