Is there an easy workaround to set up reminder emails for tickets that have not been closed? Ideally I would like a reminder email to be sent out to  the ticket owner 3 days after it has been created if it has not been opened and/or if it is not completed.

You can use ticket workflows to set up ticket reminders.
