For some reason my contact list randomly "opts out" even when my contacts don't "opt out". to tackle that I want to be able to disable/remove "unsubscribe" option from the body of the email distribution. Thank you for helping me troubleshoot.

You can't remove that from your emails, unfortunately. You can read more about that here.

There is a workaround where you can use piped text to create an “invisible” opt-out link.
You would first have to delete the standard opt-out link, then go to pipe text in the message, select “Opt-Out link” and type in a space in the text box"Enter Link Text Here..." and that would give the illusion of there being no opt-out link.
